The new cellar of Château Canadel, built in the hollow of the hillside, has been conceptualized with the firm intention of handling the grapes as naturally as possible to preserve their quality. We used the sloping terraces to back the cellar so that the winemaking processes could benefit from gravity. We chose the best materials to guarantee optimal thermic insulation.
The half-buried vat room benefits from the natural hygrometry rising from the soil. The bottles are stored underground, guaranteeing a perfectly regulated temperature. The large surface and the natural lighting offer excellent working conditions.
