Picked exclusively by hand, the grapes are carefully sorted as soon as they arrive at the cellar. After a total destemming, each berry falls by gravity into the traditional crushing tank built in heat-regulated cement for vinification. When this process is over, usually after two to three weeks, the wines are aged in large oak barrels.
To express fully all of their nuances, each plot of the vineyard is harvested separately at ideal maturity and vinified separately. Each tank has therefore its own subtleties, its own character. It is the correct blending of each note that will reveal the unique melody of the vintage!
