The vines at Canadel are planted on terraces. These narrow terraces were built in Roman times to cultivate the soil on the hill and avoid erosion from the heavy winter rain. The hand-built dry stone walls, built by generations of stonewallers, sculpture the landscape. During the day they preserve the heat of the sun which they restore to the grapes during the night, thus creating little microclimates on each terrace.
